(1) 1½ lb loaf of round sourdough bread
⅓ C. margarine
⅔ C. Chopped red or green pepper
⅓ C. Chopped celery
⅓ C. Chopped onion
1 lt. velveeta cheese, cubed
1 (10oz) frozen chopped spinach, drained and squeezed

Directions:
Cut slice from top of bread and remove center, leaving 1 inch shell. Cut removed bread into bite-sized pieces and reserve. Brush inside of shell with melted margarine. Also brush the pieces of bread with margarine. Place on a cookie sheet & bake 20 minutes at 350º.

Sauté onions, peppers in margarine until tender. Add cheese and stir over low heat until cheese is melted. Add spinach and heat thoroughly, stirring constantly. Pour into bread shell. Serve with bread top, slices, and bits. Also can be served with assorted vegetable dippers. Keep breaking the shell into pieces until it is all gone. I double the recipe for a crowd but just use one bread shell.
