Daiquiri:
2 oz. white rum
3 Tbsp. freshly squeezed lime juice
3 Tbsp. Simple Syrup (see below)
Lime slice for garnishing

Simple Syrup:
c. sugar
5 oz warm tap water

Directions:
Directions:
Add rum, lime juice and simple syrup to cocktail shaker, then fill with ice cubes. Shake until fully combined, at least 30 seconds. Strain into chilled cocktail glass, garnish with lime slice and serve.

Makes 1 cocktail but can be doubled or more. Shake a bit longer in that case.

For Simple Syrup:
Put sugar and warm water together in a jar, put on cover and shake until sugar has dissolved. Let cool completely. This is enough for several cocktails and can be stored in the fridge for weeks.
