1 whole spaghetti squash
1 T olive oil
2 chicken breasts
2 c broccoli florets
1 c cream cheese
˝ c cream (thin with water or chicken stock if mixture is too thick)
˝ c parmesan cheese
1 c mozzarella cheese
2 T butter
Garlic powder, salt, black pepper to taste

Directions:

Wash exterior of spaghetti squash and pierce all over with knife to allow for venting. Place on dish in microwave and cook on high power for 10 minutes. Remove, cool. Cut open and scoop out seeds; discard seeds. Use fork to make “spaghetti” from the squash.

Cut chicken breast into bite-size pieces, season and saute in olive oil until done. Set aside.

Make sauce by combining butter, cream cheese, and cream in pot. Bring sauce to simmer and add parmesan and mozzarella cheese seasoning with garlic powder, salt and pepper. Fold in cooked chicken and “spaghetti” squash.

Serve hot.
