16 medium raw shrimp, peeled
1/4 cup olive oil
3 cloves garlic, chopped

3/4lb orzo, cooked al dente

1 seedless cucumber, quartered then chopped
3 green onions, thinly sliced
1 pint grape tomatoes, halved
1/4 cup chopped, fresh dill, extra for garnish
1/4 cup white wine vinegar
3 tbsp Dijon mustard
1/2 cup olive oil

3/4 cup crumbled feta cheese


Directions:

1.Mix shrimp with olive oil and garlic. Hold in fridge till ready to grill
2. Combine cooked orzo, cucumber, green onions and tomatoes in a large bowl.
3. Place dill, vinegar and mustard in blender and blend till smooth. Slowly add olive oil and blend till emulsified
4. Season with salt and pepper.
5. Pour vinaigrette over orzo mixture and stir well to combine. Gently fold in feta cheese.
6. Heat grill or frying pan and grill/fry shrimp approximately 2 minutes per side.
7. Divide orzo mixture on to 4 plates.
8. Arrange shrimp over top and garnish with dill
9. Serve immediately
