1 cup kosher salt
1/2 cup sugar

Directions:

Put all ingredients into a large container and stir to dissolve.
Add chicken to the container and brine for 1-2 hours.
 

Sauce for chicken or lamb

1/4 cup fresh lemon juice
1 minced garlic clove, large
1 Tbsp chopped fresh rosemary
1/2 tsp kosher salt
1/3 cup olive oil

Directions:
Directions:
Whisk together lemon juice, garlic, rosemary, and salt. While whisking, add the olive oil in a slow stream.
