Rice:

1 1/2 cup of rice
1 1/2 water
1 packet of sazon con culantro or tomate
1 tbsp caldo de pollo con tomate
2 tbsp sofrito
1 tbsp canola oil
salt to taste

Beans and Sausage:

1 can red kidney beans
1 can black beans
1 can garbanzo beans
2 cans of diced italian tomatoes
1 hardwood smoked beef sausage (sliced)
1 tbsp olive oil
2 tbsp finely chopped cilantro
3 cloves of smashed garlic
1/2 chopped sweet onion
1 tsp adobo
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder

For the Rice:

In a medium pot with lid, combine water and rice. Add the packet of sazon, caldo de pollo, canola oil. As my mami would say, salt the water until it tastes like the sea.
Cover the rice and cook on medium-high until it starts to boil. Then, place on low for 20-30 minutes. Only uncover rice towards the last 5 minutes to fluff rice. It's important that it stays covered! If water boils down too quickly, add a tbsp of water.

For the beans and sausage:

In a medium sausce pan, saute onions and garlic in olive oil until fragrant. Add the beans, and mix well. Let cook for 5 minutes on medium-high heat. Add the cans of tomatoes, cilantro, and all seasonings. Mix well and let cook for 10 minutes on medium heat. Add sausage slices and let cook for 5 minutes on medium heat.

When rice is done, pour beans and sausage mix over the rice. Serve hot.

This is the Puerto Rican's "poor man's dinner," and can be easily adjusted to fit what you have on hand! Every household has their own version of this traditional dish, and this is mine, using my mami's recipe.
