2 cups flour
1/2 cup sugar
1/4 cup packed light brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 very ripe bananas mashed well
1/4 cup plain Greek yogurt
2 large eggs
1/4 cup vegetable oil
2 /2 teaspoons vanilla
1 cup chopped nuts or chocolate chips (optional)

Directions:

Preheat oven to 350º. Line a loaf pan with parchment paper then grease the parchment with cooking spray.
In a large bowl whisk together flour, sugars, baking soda and salt.
In a separate bowl whisk together the mashed bananas, eggs, yogurt, oil and vanilla. Add the wet ingredients to the dry ingredients and stir until combined. Stir in the nuts or chocolate chips then pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes until a toothpick inserted into the center comes out clean. Turn out on to a rack to cool.
