1 Tbs olive oil
4 (4 oz) Orange Roughy Filets
1 orange (juiced)
1 lemon (juiced)
½ tsp lemon pepper
Herbs (maybe rosemary, sage, thyme, and/or basil)

Directions:
Directions:
Combine oil, herbs, citrus juices, and lemon pepper in a bowl
Pour over the orange roughly filets (I think Dad may have done this in a ziplock and let this sit for a few hours in the fridge to marinate. He may have also put some sliced citrus in there with the fish)
Put in a baking sheet and bake at 450ºF for 15-18 minutes of until fish is flakey

Dad loved to make this simple baked orange roughy recipe. It was the last thing I ate of his cooking and he never wrote down the recipe. I looked around online and combined a few recipes that looked close. I have yet to make it but hope it tastes similar to his.
