1 tbsp butter
1 tbsp flour
milk
macaroni noodles
large egg(s) (beaten)
colby cheddar cheese (grated)
sharp cheddar cheese (grated)
salt & pepper

Directions:
Directions:
Set eggs out to come to room temp. Boil macaroni noodles until almost done (they will cook more in the oven.) In a medium saucepan melt butter. Add flour to butter to make a roux. Slowly add milk to butter/flour roux. Cook on low heat until thickened; stirring constantly to prevent scorching on the bottom. Once sauce is thickened (should stick to the back of the spoon), slowly add beaten egg, then once mixed in well, add cheese. Stir until cheese is melted. Add macaroni to sauce mixture being careful not to add too many noodles. Bake in preheated 350º oven until it is set (doesn't "jiggle" in the middle).

For cooking for a large crowd (big Corning Ware dish), use 2 tbs butter, flour, and 2 eggs. Basically doubling everything.
