1 3-4lb Chuck Roast

3 cups beef broth

4 packages Taco Seasoning

Corn Tortilla Chips

Corn Oil

Garnish:

Limes

Cilantro

Shredded Cheese

Yummy Salsa

Sour Cream

Directions:
Directions:
Brown the roast in a heavy pan on all sides in about a Tbs of oil. About 5 minutes a side.

Place roast in a slow cooker, add beef broth and taco seasoning mix. Cook on high for 4-hours.

Turn the oven on "Warm."

Pull roast out of slow cooker in a large bowl, with two forks, shred the roast.

In a large fry pan, heat 1/8th inch of corn oil, and fry tortillas. Sprinkle each with a pinch of salt. Continue to fry until they brown.

Flip the tortillas, add a couple forks of meat onto the tortillas, fold and fry them on the other side.

Work in batches, adding completing taco to the warming oven.

Serve hot with all garnish.

In the 70's, Arline's mother, Sarah Radillo, would make these tacos for your Uncles Kit, Sean and I. She would rave about how many we would all eat. She was an amazing cook.
