½ c. fat-free buttermilk
2-3 drops hot pepper sauce
½ c. corn flakes, crushed
3 tbsp. flour
¼ tsp. salt
¼ tsp. fresh ground pepper
2 lbs. chicken parts, skinned
4 tsp. vegetable oil or bacon fat.

1. Preheat oven to 400º
2. Spray large baking sheet with non-stick spray.
3. In a large, shallow bowl combine milk and pepper sauce.
4. In a separate bowl, combine cornflakes, salt, pepper and flour.
5. Dip chicken in milk and dredge in cornflakes, place on baking sheet and drizzle with oil.
6. Bake for 30 minutes. Turn and bake until cooked through, another 15-20 minutes.
