Marinade:
34 cup apple cider vinegar
¼ cup vegetable oil
1 cup sugar
1 T water
1 tsp. salt
½ tsp pepper

Combine ingredients for the marinade in a small
sauce pan. Bring to a boil and let cool down.

Vegetables:
1 can black-eyed peas, drained
1 can pinto beans, drained
1 can corn, drained
1 jar chopped pimentos, drained
1 cup celery, finely chopped
1 green pepper, finely chopped
1 small onion, finely chopped
1 jalapeno, minced (remove the seeds)


Directions:
Directions:
Mix all together and pour on the cool marinade.
Serve with Tostito Scoops.

*The trick is cutting the veggies so everything
is the same size – about as big as a kernel of
corn.
* Best after it sits overnight
