1 ea fish or fillet of fish
½ tsp salt
¼ tsp fresh black pepper
¼ cup White cornmeal
Canola oil or similar to cover

Directions:
Directions:
Put oil in pan and turn high heat. Wash fish sprinkle on salt and Pepper. Dredge in cornmeal so that fish is completely covered. When oil is approximately 365ºF lay fish into oil. try to maintain oil Temperature between 325º and 375ºF. Brown the fish and then flip it if it is not completely covered. When brown on both sides remove from oil. turn off oil and let cool before straining out impurities.

This works best for white fish with low oil. Oily fish are better grilled, smoked or baked.
