12 oz. egg whites
24 oz. granulated sugar
¼ tsp. salt

Directions:
Directions:
Whip egg whites and salt in a mixer until frothy. While continuing to whip the egg whites, slowly add 12 oz. of the sugar until it achieves stiff glossy peaks. Remove from mixer, fold in the remaining 12 oz. of sugar.

Line a baking sheet with parchment paper. Pipe the mixture onto the parchment paper.

Bake at 200º degrees for an hour until it starts to get crisp. Turn the oven off, leaving the pan in for at least one more hour. Eat promptly or store in an airtight container.

Do not refrigerate!
