1½ c. sugar
6 T. corn starch
Pinch of salt
½ c. milk and enough water to make 2 cups
2 lemons
3 eggs (divide out egg yolks and set whites aside for meringue)
1 9-inch pie crust, baked
¼ cup plus 2 tablespoons sifted powdered sugar

Directions:
Directions:
Cook sugar, corn starch, salt, milk and water in double boiler until begins to thicken. Add beaten egg yolks and juice of 2 lemons. Stir until thick. Pour filling into baked pastry shell.

Top with meringue: In a large glass or metal bowl, whip egg whites until foamy. Add powdered sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

Bake in 350º preheated oven for 10 minutes or until meringue is golden brown.
