1 ea Chicken cut in 4 pieces
1 tsp seasoning salt
1 tsp Fresh ground black pepper
3 TBS olive oil
⅓ cup bbq sauce(see recipe)

Directions:
Directions:
wash chicken dry and brush olive oil on inside of chicken. sprinkle seasoning salt and pepper on chicken. Rub to get spices to stick and turn over. repeat with olive oil, Seasoning salt and pepper. start charcoal and let it turn 1/2 white. put coals in grill let the coals turn white. Place chicken indirect heat close but not directly over the coals with inside of chicken down toward coals. Close lid after 30 minutes turn chicken over and slide the pieces so they are beginning to be over the coals close lid cook 25 more minutes flip again and place directly over coals continue cooking with closed lid for 25 minutes. Flip and brush sauce to the inside at this time if desired. with sauce side up cook approximately 4 minutes with lid down. Flip chicken and brush sauce on the outside of the chicken.close lid and cook 6 minutes. Chicken should now be done and sauce partially dry.
