1 ea Pork shoulder(coston butt)9-10 lb
3 TBS Lard or tallow
2 tsp Lawrys seasoning salt
½ tsp Fresh ground black pepper
1 cup red wine

Directions:
Directions:
Put lard or tallow in Large skillet over medium heat. once oil is hot put roast in oil and brown, flipping once side is browned. once roast is browned on all sides season with salt and pepper. Pour red wine in roasting pan and place rack into pan. place meat on rack in roaster and cook at 325ºF cook for 1hour. cover the meat with roaster lid and continue cook for 4 hours and check temperature of internal meat. It needs be 205-209ºF for pork. Return to cooking until these Temperatures are achieved.
