2 TBS bacon grease
1 lb lean ground beef
2 ea onion, chopped
1 cup celery finely chopped
2 ea Garlic cloves minced
1 ea green bell pepper, seeds and stem removed, chopped
1 tsp salt
1 TBS chili powder (more or less to taste)
2 tsp dried cumin (more or less to taste)
¼ tsp dried Oregano
1 ea (14.5-ounce) can fire-roasted(or diced) tomatoes
1½ cup whole kernel corn, drained
½ cup sliced ripe olives

Preheat oven to 350°F
Heat bacon grease in a cast iron dutch oven on medium high. Add the ground beef, onion, celery, bell pepper and garlic. Add salt, chile powder, oregano and cumin. Cook, stirring infrequently, until the ground beef has browned on all sides.
Remove from heat. Drain excess fat if necessary (if you are using lean beef, there shouldn't be excess).
Mix in tomatoes, corn, olives, Adjust seasoning. Add more chile powder and cumin if desired.
Spoon the crust mixture over the filling. bake at 350ºF for 40 minutes.

¾ cup yellow cornmeal
1 tsp salt
2 cups water
2 TBS butter

Directions:
Directions:
Mix the cornmeal and salt into the water. Cook approximately 5 minutes stirring occasionally. stir in the butter.
