Main low country squirrel stew

3 ea cleaned and cut up squirrels
½ cup Roux(see recipe below)
1 tsp salt
1 tsp Fresh ground black pepper
½ tsp red Pepper flakes

Directions:
Directions:
Cut squirrels up. Add enough water in dutch oven or slow cooker or pressure cooker to cover squirrels. Boil squirrels in water to cover approximately 90 minutes or Place into 15lb pressure cooker and cook at pressure for 30 minutes. Meat must come off bones easily. remove squirrels and shred meat. Discard bones. Add meat, Roux, pepper, salt, and black pepper to the water return meat to pot, mix slowly and stirring cook approximately 15-30 minutes . Serve over buttermilk biscuits.

4 oz oil or melted unsalted butter

over medium temperature heat oil/butter until bubbling add flour and whisk until slightly brown
