Ingredients: 1 ea Whole Chicken cut up 4 cups water ½ cup All purpose flour 1 tsp Salt ½ tsp Fresh ground black Pepper

Directions: |
Directions:Add chicken to pot with water and salt, stirring occasionally; bring to a boil. Reduce heat; simmer, covered, 30-45 minutes till meat easily separates from bone. remove from stock reserve the stock. Pull all meat from bones. Discard the chicken skin and bones. return meat to stock in pot. Add salt and pepper. . Add dumplings to the pot one at a time so they do not stick together. If desired sift the flour into the pot to reach constitution desired. |

Ingredients: 2 cups all-purpose flour ½ tsp baking powder 1 tsp salt 1 cup milk 1 egg 2 TBS butter, melted

Directions: |
Directions:For dumplings, in a bowl, whisk flour, baking powder and salt. In another bowl, whisk milk, egg and melted butter until blended. Add to flour mixture; stir just until moistened . refrigerate in ball shape cover with plastic wrap for 1-2 hour. Roll into thin sheet approximately ⅛ inch. slice into strips approximately 1" x 3" x⅛" let dry for couple of hours. |

Notes: Country cured Ham can be substituted for the chicken. have ham sliced to 1/4 " thickness and soak for a couple hours in clean water. Pour water off and slice ham into bite size pieces.
