1 cup chopped onion
4 cups beef broth or chicken broth
11/2 cups beet reserve or pickled beet juice
1/2 cup apple cider vinegar
1/2 tsp. salt
1/8 tsp. pepper
3 cups of cooked shredded beets
2 medium potatoes peeled and diced
1 bay leaf
1 tsp. lemon juice

To taste:
Sugar or SplendaŽ

Sour cream

Directions:
Directions:
Cook beets. Peel & shred or grate.
In a large pot or Dutch Oven combine all ingredients with the exception of sour cream. Simmer until heated through and potatoes are cooked.
