Ingredients: 1 lb of 80-85% beef 1/2 lb of ground pork 1/2 lb of ground veal 2 eggs, lightly beaten 1 clove of garlic, minced roughly A small chopped onion (this will make the balls ugly, all sticking out, but so good)
Some parsley and some basil 1 slice of stale bread (best if you have your own homemade or buy day old at bakery) Whatever milk product you have in the house (enough to submerge the bread in) 2 TBS butter, softened Whatever milk product you have in the house (enough to submerge the bread in) 1/2 cup good grated parm 1 tsp salt 1/2 tsp pepper Olive oil and a little salt pork or something similar if you have it/feel like it
Maybe: some red sauce, some homemade stock, parm rinds

Directions:1. Soak the bread for a few minutes then squeeze and shred
2. Mix well, but gently (see notes on other meatballs)
3. Heat the olive oil and salt pork together in a skillet (I like my big magnalite for this) on medium. Add MB and brown on all sides.
Here is when you decide what you're going to do with them. I like to take them out, get some of the fat off of them, and then add them back to the pan. I then add some chicken broth and some red sauce and simmer them for about 20-30 minutes, throwing in basil and parm rinds at this time. |
