2 T Olive Oil
4 Cloves Garlic, minced
Pinch Crushed Red Pepper Flakes
8 oz Jar Sun-dried Tomatoes
1 lb Pasta, Penne or Rigatoni
2 T Butter
½ C Parmesan, shredded or graded
1-2 C Pasta Water
SP to taste

Directions:

Boil pasta according to package directions, el dente.

Once pasta is in the water, heat oil, garlic, and crushed pepper in a skillet for 2-3 minutes over medium heat, stirring frequently so garlic doesn't burn. Add drained sun-dried tomatoes and heat another couple minutes.

Add a half cup of pasta water to skillet and bring to simmer over med-high heat, adding more pasta water if it gets too dry.

Add el dente pasta to skillet and more pasta water so that everything looks loose.

Turn heat off and add butter and cheese. Stir to combine, adding more pasta water as needed.

Salt and pepper to taste and serve.
