2 tablespoons yellow cornmeal
2 teaspoons Cajun or blackened seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon lemon-pepper seasoning
2 catfish or tilapia fillets (6 ounces each)See note
1/4 teaspoon paprika

Directions:
Directions:
Preheat oven to 400°. In a shallow bowl, mix the first 6 ingredients.
Dip fillets in cornmeal mixture to coat both sides. Place on a baking sheet coated with cooking spray. or lined with no stick tin foil. Sprinkle with paprika.
Bake until fish begins to flake easily with fork, 20-25 minutes. Cooking time will depend on the thickness of the fillets.

Any fairly firm white fish - cod etc. works. I use home made Emeril's essence (recipe in this book) and omit the garlic powder for the breading. I also just put the paprika in the coating mix rather than sprinkle it on the fish.
