Directions:Measure flour into large bowl and make a well in center. Combine eggs, salt, oil, and water. Whip with fork until blended. Pour in a little water at a time into the well of the flour. Continue to pour water until a soft dough forms. (Keeping it smooth). Coat hands with oil, work dough to use flour (keeping the dough very, very smooth). Pick up dough and slap onto board covered with flour until no longer sticky. (You may have to add a little flour as you go.) This may take 10-15 minutes. Put in a well greased pie tin. Cover with a clean dish towel. Place in a warm place for about 35 minutes. You can do this by preheating your oven to 250º then turning it off before placing your dough in it. Your dough will be ready when you can touch it and it begins to stretch. Place table cloth on large table, dust with flour. Put dough in center of cloth. Begin stretching from center of dough (easier if two people help). Be careful not to tear dough. When dough is stretched to size of table top, place filling on dough (either apple, cheese, or masena). Starting from long side, lift cloth to cause dough to roll such as a jelly roll. Roll to center from both sides, leaving a small section not filled. Flip onto a greased heavy cookie sheet and bake 45 minutes to 1 hour or until golden brown. |

Cheese Filling: 4-5 lbs jack cheese 1 large onion, chopped very fine 2-3 eggs, beaten You may need to add another egg. Mixture should be easy to spread and enough to cover strudel dough.
Masensa Filling: 4-5 lbs jack cheese 1 large onion, chopped very fine 2-3 eggs beaten Ham (cubed about ½") pieces About 1 cup figs (adjust to your liking), cut into small pieces. Mixture should be easy to spread and enough to cover strudel dough. You may need to add another egg.
