2 large tomatoes
1 large chopped yellow onion
3 T Butter
˝ C salsa
3 cans black eyed peas
˝ lb. of smoked sausage
4 large garlic cloves, finely chopped

Directions:
Directions:
Sauté chopped onion in butter, add tomatoes and garlic and cook about 3 minutes. Add peas with the liquid, salsa and sliced up sausage. Bring to a boil and reduce heat and let simmer until you are ready to serve. This also can be done in a crockpot to simmer for a few hours after you sauté the ingredients on the stove.
