Ingredients:  
Ingredients:  
3 cups long grain rice (washed first)
7 quarts whole milk
5 sticks cinnamon
1½ tsp salt
2½ cups sugar
1 cup raisins (or to taste)
1 cube butter
1 bottle pure vanilla extract to taste
2 bottles pure lemon extract to taste
2 bottles pure almond extract to taste

Heat milk over low heat
Add cinnamon sticks
Add butter until melted
Add rice
Keep on low heat
Take turns stirring all day while enjoying egg nog and John Denver and the Muppets Christmas until rice begins to rise to the top (takes around 5-6 hours)
Add extracts a little at a time as you go, to taste
Soak raisins in water until plump
Add raisins at the end
Refrigerate and heat up before serving

This is one of those recipes that I will make for forever. Christmas cannot happen until we spend a day making a pot of Grandma Sorensen's rice pudding. Uncle Rick liked golden raisins and more almond extract. My Mom prefers not very many raisins. It has become an Atkin family classic. Must be served with Grandma Sorensens biscotti.
