1 pound navy beans, sorted and rinsed
1 smoked ham hock
2 medium onions, chopped
2 carrots, sliced or chopped
2 celery ribs, chopped
8 cups water
salt and pepper to taste

Directions:
Directions:
Sort and rinse beans. Place in a large pot with water and soak for eight hours or more. Add rest of ingredients and bring to a boil. Reduce to a simmer and cook until beans are soft, About two hours or more.

Serve hot with Texas Pete hot sauce to taste.
