Ingredients: 1 Tbs olive oil ½ medium onion, chopped 2 bay leaves 1 tsp ground cumin 2 Tbs dried oregano 1 Tbs salt 2 stalks celery, chopped 2 green bell peppers chopped 2 jalapeño peppers, chopped 3 cloves garlic, chopped 2 (4 oz) cans chopped green chilies, drained 1-2 (12 oz) packages vegetarian burger crumbles 3 (28 oz) cans whole peeled tomatoes, crushed ¼ cup chili powder 1 Tbs ground black pepper 1 (15 oz) can kidney beans (drained) 1 (15 oz) can garbanzo beans (drained) 1 (15 oz) can black beans (drained) 1 (15 oz) can whole kernel corn

Directions:Heat oil in a large pot over medium heat Stir in onion and season with bay leaves, cumin, oregano, and salt Cook and stir until onion is tender, the mix in the celery, green peppers, jalapeño peppers, garlic, and green chili peppers. When veggies are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes Mix tomatoes into the pot and add chili powder and black pepper Stir in drained beans Bring to a boil and reduce to low, simmer 45 minutes Stir in corn and cook 5 more minutes before serving Best enjoyed after a really long hike |

Notes: This has become a classic recipe of my mom's, and included is the original recipe she printed from allrecipes, November 2009. I will never forget this day. My friend Jes and I had gotten lost on a hiking trial and we wound up on another trailhead then where we started. We had called my mom when we got service and begged her to come pick us up. It had begun to rain and we were so hungry. My mom had us to her house where she had already made this chili. It was just the best chili ever and she has been making it ever since. She usually puts just one package on the veggie crumbles and we often serve it with cornbread. You won't even miss the meat, I promise. :)
