2 sticks butter
1 cup Mizithra cheese
Pasta of choice

Directions:
Directions:
Cut 2 sticks of butter into 8 pieces and place into a 2-quart sauce pan
Place on medium heat
Bring butter to a slow boil (about 5 minutes), once boiling stir constantly
Butter with foam and rise, stir constantly to prevent overflowing (about 5 minutes)
Once butter stops foaming, cook until amber in color and has a pleasant caramel aroma (about 1-2 minutes)
Turn off heat and remove pan from burner, let sediment settle for a few minutes
Boils pasta of choice until al dente
Drain pasta and divide into 4 servings
Spread ¼ cup Mizithra over each pasta serving
Top with ¼ cup hot brown butter

We went to the Spaghetti Factory often in SLC and this was always my (and my sister's!!) favorite dish. So simple. The brown butter and salty mizithra cheese make it just perfect. We often accompanied this with the steamed broccoli, and the same brown butter and mizithra topping (which my sister introduced me to). So delicious!
