2 cups flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons butter
1 egg, beaten
3/4 cup milk, approximately

Directions:
Directions:
Preheat oven to 425F. Sift the flour, sugar, baking powder and salt. Chop in the butter with a pastry knife until the texture of course cornmeal. Add egg and about 3/4 of the milk. Stir quickly and lightly, only until no flour shows. Add more milk if needed to make a soft dough. Turn dough out onto a floured surface and knead gently about 15 times. Cut the dough in half. Shape each half into a ball, press each down into a round about 1/2 inch thick and cut into 8 wedges. (Alternatively drop by spoonful onto pan.) Place on a greased baking sheet without allowing the sides to touch. Glaze, if desired, with lightly beaten egg. Bake until deep golden brown, about 12 minutes.
