SHRIMP TACOS Recipe

SEASONING FOR SHRIMP
1 pound of raw medium/large shrimp (deveined and shell removed)
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/4 teaspoon ground cumin
1 garlic clove pressed or minced (use garlic crusher tool)

1 tablespoon of olive oil in cooking skillet

GARNISHES FOR SHRIMP:
2 cups of thinly shredded purple cabbage
1/2 of a purple onion finely diced
1 limes cut into wedges
1 avocado diced up
1/4 bunch of cilantro coarsely chopped up
4 oz. (1 cup) Cotija Cheese, grated

8-10 white corn tortillas (6" diameter) (I used yellow corn then fried and drained them on paper towels.
Directions:
Directions:
1) pad dry with a paper towel your shrimp before seasoning.
2) Combine salt, black pepper, cumin, and garlic with shrimp and mix together.
3) Use a large skillet over medium high heat and put olive oil.
4) Once oil is hot add a single layer of shrimp and saute for about 2 minutes per side. Or just until the shrimp is cooked through. Now put aside too cool.
5) Prepare your garnishes for the tacos.
6) Now garnish your taco with purple cabbage, purple onion, avocado, cilantro, and squeeze lime juice on it. DON'T FORGET THE GREAT JALAPENO FISH SAUCE

This was a big hit with our family. Since we refrain from eating meat on Friday's this was another great recipe to have on hand. Nothing being missed here....awesome dish.
