- Egglplant
- Italian Breadcrumb (pg. #)
- 2 Eggs
- Olive Oil
- Mozzarella Cheese (shredded)
- Romano Cheese (shredded)
- Marinara Sauce (pg. #)

Directions:
Directions:
1. Peel Eggplant
2. Slice into ¼ inch slices
3. Put sliced Eggplant into a colander, put paper towel on Eggplant & put something heavy like a pot to get moisture out. Leave this for 30 minutes.
4. Prepare your Italian Breadcrumb (pg. #)
5. Crack two eggs and place in a bowl beside your breadcrumb.
6. Dip Eggplant slices in egg and then into breadcrumb.
7. Fry the breaded Eggplant slices in olive oil until browned on each side.
8. Put fried eggplant on paper towel to drain excess oil.
9. Coat the bottom of your baking pan with marinara sauce (pg. #). Layer the Eggplant slices evenly on top of the sauce. Then add mozzarella and romano cheese on top of the Eggplant. Repeat layer like this until the baking pan is full.
10. Bake at 350ºF until cheese is melted.
