Soup
• 3 -4 raw chicken breast
• 3 cans of chicken broth + 3 + cans of water or 3 chicken bullion cubes + 6 cups of water (enough to cover chicken and make a soup)
• 1-8 oz can of tomato sauce
• 1- peeled onion cut in half and then cut each half into 3 pieces
• 1 heaping TBS of cumin spice
Toppings
• Small amount of cilantro chopped (optional)
• 2- sliced avocados (optional)
• 8 oz of shredded Monterey Jack or pepper Jack cheese
• 1 bag of tortilla chips

Method
• In a soup or stock pot or approx. 5 quart crock pot
• Add broth, tomato sauce, onion, chicken and cumin
• Bring to a boil and then turn down
• Cook on simmer or low for several hours to cook until chicken is tender and able to be shredded and chopped
• When done you can remove and discard onion
• Take out chicken and shred & chop
• Place chicken back into soup
• Re-heat
• Serve up soup into bowels
• then add tortilla chips top shredded Jack cheese. The cheese should be melted, If not microwave the bows for 30 seconds- 1 minute
• Top with sliced avocado & tsp. chopped cilantro & serve
Tip
• If the soup is lacking flavor add another chicken bullion cube and perhaps a little more cumin
