Washed yellow summer squash
Salt
Olive oil
Flour

Wash squash throughly. Cut off ends and discard. Do not peel. Slice the squash from end to end in thin circles. With a fork, lightly scramble one egg in a pie pan or flat dish. Layer the squash in the egg mixture and make sure they are coated well with egg on both sides. Sprinkle with salt. Heat Olive oil in a non-stick skillet. Dip squash from egg into flour (flat dish also). Lay squash into hot oil. Stay with it and adjust heat as needed so it won’t burn. Sprinkle a little more salt on the floured, frying squash. Turn squash to brown on both sides. Drain on a paper towel. If your oil burns, throw out and get new.
