1 1/3 c. sugar
2 c. all purpose flour
2/3 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 (3 oz) pkg. lime flavored gelatin
1 1/3 c. cooking oil
3/4 c. orange juice
5 eggs
1/2 tsp. vanilla extract
1 tsp. lemon extract
1/3 c. key lime juice
1/3 c. 4x sugar
whipped cream garnish with lime slices

Preheat oven to 350F. Place dry ingredients in mixing bowl and blend well. Add cooking oil and blend. Add orange juice and blend. Add eggs, one at a time, and blend well. Add vanilla and lemon extracts. Pour batter into a greased and floured 9x13x2 baking dish. Bake approximately 30 minutes. Let stand in dish 20 minutes or until almost cool. Prick cake all over with fork and drizzle with lime juice mixed with 4x sugar. Cover and refrigerate. Cut into squares, garnish with whipped cream and lime slices.

Serves 20-24
NOTE: If key limes are not available, any limes can be substituted.
