1 box any kind of devil's food cake mix
1 (10 ounce) box frozen spinach
1 can beets (whole or sliced)

Directions:
Directions:
Prepare cake mix as directed
Use the same amount of water, oil, and eggs as directed on box (applesauce can be substituted for the oil for reduced fat.)
Thaw spinach and combine with the beets in a food processor. Process until mixture is the consistency of baby food. (You have to scrape the sides down and process for at least 5 to 8 minutes)
Take a cup at a time of mixture and mix into cake mixture.
Add as much as desired
I usually end up with anywhere from 1/2 cup to 1 cup left over.
Bake according to directions for cupcakes on box.
