4 tsp butter
2 tbl olive oil
2 lbs onions, thinly sliced (7 cups: should equal 4 large onions)
1 tsp salt
3 tbl flour
2 quarts beef bouillon (8 cups)
1 loaf French bread, either cut in cubes or at an angle
2 tsp olive oil
1+ c thinly sliced Gruyere cheese

Directions:
Directions:
1) Melt butter then add 2 tbl olive oil. Stir in onions and salt and cook 20-30 minutes, until brown.
Sprinkle flour and cook for 2-3 minutes.
Remove from heat.
2) In a separate sauce pan, heat bouillon to simmering.
Stir hot bouillon over onions. Simmer another 30 minutes.
3) Bake cubes or diagonals at 325 for 15 minutes. Lightly coat bread on both sides with olive oil, turn over for another 15 minutes.
4) Add cubes to soup or diagonally cut the bread, add cheese, put in oven at 375 for 10-20 minutes, until cheese melts.
