1 C canned pumpkin 1/2 C oil
2 Eggs 1 Cup sugar
1 t Vanilla 1/2 t salt
1/2 t Baking soda 1 1/2 t Pumpkin pie spice
1/2 t Baking powder 1 1/2 C flour
1/2 C raisins (optional) 1/2 C Walnuts (optional)

Preheat oven to 350
beat eggs and sugar in a large bowl
Add pumpkin, oil and vanilla mix well
Sir in the remaining ingrediencies
A hand mixer may be used to blends it altogether
If nuts and raisins are added fold them in last
Back 250 about 1 hr or until a toothpick inserted in center comes out clean.
Use 1 large loaf pan which has been greased and flowered or small muffin tins.
Size of the pan or tins will change the baking time, so be sure to check while baking.
