3 C mashed potatoes
2 eggs
1/3 C sour cream
1 heaping cup cheddar cheese
2 T grated parmesan
2 T chopped chives or parsley
Salt and Peppers to taste

Directions:
Preheat oven to 400º
Lightly grease with butter muffin tins
In a medium bowl whisk the eggs, add sour cream and stir in both cheeses and chives mix well.
Add potatoes and mix.
Spoon into muffin tins
Bake 35-30 until. they pull away from the sides of the cup and are golden brown.
Remove from oven and let cool 5 minutes before serving
Serve with sour cream.
