1 1/4 C graham cracker crumbs 1 1/4 C sugar
1/4 C soft butter 2 LB cream cheese
4 eggs 3 T flour
1/4 t salt 1/2 C light cream
1/4 t grated lemon juice 1 t fresh lemon juice

Directions:
Directions:
Blend crumbs, 1/4 sugar, butter
press evenly into 9" spring form pan
beat cream cheese until fluffy
beat eggs into cream cheese mix
mix remaining sugar, flour, and salt
stir in cream cheese mix, lemon rind, and lemon juice
pour over crust
bake 350 for 1 hr
turn off oven
leave in oven for 30 min
Remove from over
cool on wire rack
refrigerate overnight
remove sides of pan
serve
