1-2 tbl light olive oil
1/4 c minced shallots (or thinly sliced yellow onion)
1 c thinly sliced red bell pepper
2 tbl bottled pickled jalapeño, chopped + 1 tbl juice
1/4 c pimiento stuffed olives, sliced
1 tbl golden raisins
3 fresh mushrooms sliced
1-3/4 c mild salsa
1 tbl lime juice
1-1/3 lb fresh halibut fillet, cut 4 servings
(***or Tilapia, Red Snapper, Cod, Flounder or Cat Fish)
1/8 tsp salt
fresh ground pepper
lime wedges
sliced avocado

Directions:
Directions:
Heat oil in skillet, add shallots and peppers and sauté 5 minutes. Stir in balance of ingredients. Bring to a simmer.

Lay halibut in pan, sprinkle with salt and pepper. Spoon sauce over halibut, cover and cook 3 minutes. Turn fish over cover and continue cooking 12 minutes/inch of thickness or until fish flakes easily.

Serve with lime wedges and sliced avocado.

Serve over roasted potato wedges or Maria's Mexican Rice or sauteéd vegetables.
