2 Tbs vegetable oil
2 onions (about 2 cups)
2 minced cloves garlic
¼ cup chili powder
2 Tbs brown sugar
¾ tsp cinnamon
½ tsp ancho chili powder
½ tsp ground cloves
1 15.5 oz can diced tomatoes
3 Tbs cocoa powder
3 Tbs peanut butter
tortillas
cheddar cheese
chicken (optional)

Directions:
Directions:
Heat oil, add onion and sauté 10-12 minutes
Add garlic, chili powder, sugar, cinnamon, clove, and ancho chili powder and sauté for 1 minute
Add tomatoes, cocoa, peanut butter, and 2 cups water, with salt and pepper to taste
Cook on low heat for 15 minutes
Preheat oven to 350ºF
Put ¾ cup sauce on the bottom of a baking sheet
Dip tortillas in the enchilada sauce and roll tortillas with cheese (and pre-cooked chicken if using) in the middle
Top with remaining sauce and cheese on top
Bake 20 minutes

My Dad got this recipe from Anita, who worked with my Mom in SLC at Mountain Bell. My Mom and Dad both loved this recipe, with the surprise of peanut butter in the sauce! I found this recipe written in my hand-writing, in the depths of my Mom's recipe book (it wasn't worth showing because you could hardly see it). I have no idea where I got the recipe! I maybe ran into Anita at some point and wrote down the recipe, because my parents thought they had lost it. So glad to be able to make these delicious enchiladas again!
