8 medium baking potatoes
⅔ c. sour cream
1 tsp. salt
¾ tsp. pepper
10 bacon strips, cooked, crumbled
4 green onions, chopped, divided
½ c. butter
⅔ c. milk
2 c. shredded cheddar cheese

Directions:
Directions:
Bake potatoes until done. When potatoes are done, cut in half and scoop out pulp. Mash pulp with butter, stir in sour cream, milk, salt and pepper. Reserve ¼ c. crumbled bacon for topping. Fold in remaining bacon, 1 c. cheese and half onions into potato mixture. Transfer mixture to a greased 13 x 9 baking dish. Top with remaining cheese, onions and bacon. Bake 20 minutes or until heated through and cheese is melted.
