2 tbs. butter
1 cup chopped onion
1 cup sliced pealed carrots
1 cup slice celery
1 lb. ground beef
6 to 8 cups V-8 juice
1 cup cubed pealed potatoes
1 cup slice zucchini
1 or 2 cups coarsely chopped cabbage
salt to taste
1/8 tsp. cayenne or black pepper

Directions:
Directions:
Saute onion, carrot, celery in butter until vegetables are limp but not brown
Add beef and cook until it loses its color, breaking it apart as it cooks.
Drain fat
Stir in V-8, potatoes, zucchini, cabbage and pepper
Salt to taste
Cover and cook over low heat for about 30 to 40 minutes or until vegatables are to desired doneness

You can leave out the zucchini or cabbage and add other vegetables if you don't like zucchini or cabbage. Start with 6 cups V-8 and add more if needed.
