5-6 lbs of beef chuck roast
1 onion
5 cloves of garlic
32oz of crushed tomatoes
3 bay leaves
8 cups of beef broth
8 cups of water
6 guajillo chilies
3 chilies de Arbol
5 ancho chilies
Cumin
Chili Powder
Salt and Pepper
Mexican oregano
Lime juice to taste

Directions:
In a pot put a little oil in the pot and sear the chuck roast with salt and pepper
take the meat and throw in onion and garlic add the beef broth and water
Add the chuck roast back in
Add the crushed tomatoes lime juice and peppers and let boil for one hour
After one hour remove onions, garlic, chilies and add them to a food processor blend and add back to the meat.
add Mexican oregano and bay leaves and spices and boil for three hours.
Shred meat and serve with corn tortillas
