16 oz package spaghetti or linguine
½ bunch broccoli cut into 1” pieces
2 T olive oil
12 oz package mushrooms cut in half
Small onion minced
Small carrot cut into matchsticks
Small red pepper cut into ¼” strips
12 oz can evaporated skim milk
2 tsp chicken bouillon
1¼ tsp cornstarch
½ tsp salt
Medium tomato seeded & diced
2 T Parmesan
2 T minced parsley

Prepare pasta drain & keep warm
Cook broccoli in 1” water to tender crisp. About 3 minutes
In 12” skillet over high heat, sauté mushrooms, onion & carrots till tender crisp
Add red pepper
In 2 cup measuring cup whisk milk, bouillon, cornstarch & salt
Stir above into vegetables, boil for 1 minute
Add tomatoes, broccoli, Parmesan & spaghetti, tossing to coat
