2 tbsp red wine vinegar
1/2 to 2 tsp hot pepper sauce (we like Frank's)
2 tsp olive oil
1 medium sized clove of garlic, minced
dash of black pepper
1 can (about 15 oz) black beans, rinsed and drained
1 can (11oz) corn, drained
1 ripe avacdo, chopped into 1 to 1 1/2 cups
1 cup chopped tomatoes
1/4 cup sliced scallion, both white and green parts
1/4 cup chopped fresh cilantro

Tortilla chips

Directions:
Directions:
Place red wine vinegar, hot sauce, olive oil, garlic and black pepper in a small bowl and whisk together to combine. Set this aside.

Place black beans, corn, avocado, tomatoes, scallion and cilantro in a large mixing bowl and gently stir to combine.

Pour dressing over vegetable mixture and stir just enough to coat.

Refrigerate, covered, until ready to serve.

Serve with tortilla chips on the side
