1 onion, chopped
2 Cloves Garlic, finely chopped
1 Carrot Chopped small
3 tbsp butter
1 tsp Curry powder
1 Tb fresh ginger, grated
5 cups Broth – (we use veg, but you can use chicken)
1 c of Coconut Milk
2 tbsp tomato paste
¾ C Red Lentils
Salt and pepper to taste.

Directions:
In a saucepan, melt butter and soften the onion, garlic, and carrot. Add the curry powder and cook for 1 minute. Add the ginger, Broth, coconut milk, and tomato paste. Bring this to a boil and add the lentils. Reduce heat, cover, and simmer for 20 minutes. Check your seasoning and add salt and pepper.

Serve with flatbread or naan bread
