Lemon Bars Recipe

The Hartley Amicon Family


Ingredients for crust:
2 cups sifted flour
1/2 cup sifted confectioners sugar
1 cup butter or margarine

Ingredients for topping:
4 eggs, beaten
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder

Sift together the 2 cups of flour and confectioner sugar.

Cut in butter until mixture clings together.

Press in a 13x9 inch baking pan and bake at 350 degrees for 20 to 25 minutes.

Beat together eggs, granulated sugar, and lemon juice.

Stir together the 1/4 cup flour and baking powder, stir into egg mixture.

Pour over the baked crust.

Bake at 350 degrees for 25 min longer.

Sprinkle with additional confectioners sugar.

Cool. Cut in bars.
